Today I caught up with my pal Lochan who showed me how to put together a really nice curry, with huge assistance from his Panasonic blender.
The blender has a dual purpose in India, one of which is to grind spices to powder form using the milling function. In India spices are sold in their original raw form so milling is necessary. In the old days, people used to manually grind them with a mortar, but nowadays many families have started using blenders with milling capability.
After Lochan grinds the spices, he sets them aside and then uses the blender to make a smooth puree of onions and tomatoes. After that he stir-fries the milled spices and once their lovely aroma takes hold, he prepares to mix in the puree, adds water then stews the savory concoction.
In no time, an indescribably delicious aroma fills the kitchen. Before serving he tosses in some soft boiled chicken.Voilà! A really fine chicken curry is ready to be served!
"This blender really makes everything easy. Totally indispensable if you ask me," says Lochan, beaming with satisfaction at the lovely curry he sets in front of me.
